Vegan Desserts Your Fam will LOVE for Thanksgiving

Okay, so Thanksgiving is around the corner, which is so exciting because that means my finals are around the corner too, and then I only have one more semester left of college! I am SO PROUD of myself.

As I start to get older, I feel like I need to bring a “dish” to holiday events. You know what I’m saying? Like growing up, you watched your mom bring her famous stuffing, or in my case, her famous pinapple dish to every holiday event. You, of course, didn’t have to bring anything because you relied on your mom to bring it since you’re going with her. Can anyone else relate?

Now I feel like I definitely need to step my game up, but here’s the thing, I’m really not the best cook, like at all. I am actually a really good baker! I think I’m better at baking because I love desserts and sweets, like LOVE them. Some would call that a pastry chef but let’s not get ahead of ourselves, I am no “chef”.

This year I did luck out, I don’t have to bring anything for Thanksgiving because I’m hosting Thanksgiving at my apartment, and it’s only going to be with my mom and Zach. That also means that I really won’t have to cook at all, even though I’m hosting, because my mom will do the cooking!

BUT I will still do some baking that all three of us can enjoy! Are you ready to get the recipes for these two desserts I’m about to share with you? And yes, I have already made both of these desserts and they were so incredibly good. So feel free to whip these up yourself and bring them to your holiday gatherings.

Chocolate Chip Pumpkin Loaf:

» 1  1/2 cup brown sugar

» 1/2 cup organic apple sauce

» 1 banana

» 1/2 of a 16 oz can of pumpkin

» 1  1/2 cup whole wheat flour

» 1/2 tsp ground cloves, ground cinnamon, ground nutmeg, baking soda

» 1/4 tsp salt

» 1/4 tsp baking powder

» 1/2 cup vegan chocolate chips

» Bake at 350 degree for 50 minutes «

Chocolate Chip Pumpkin Cookies:

» 3/4 cup whole wheat flour

» 1/2 cup rolled oats

» 1/4 cup sugar

» 1/2 tsp baking powder

» 1/4 tsp salt

» 1 tsp ground cinnamon

» 1/2 tsp ground nutmeg

» 1/4 tsp ground ginger

» 1/4 cup maple syrup

» 1/2 cup canned pumpkin puree

» 1 tsp vanilla extract

» 1  1/2 tbsp canola oil

» 1/4 cup vegan chocolate chips

» Bake at 350 degree for 10-12 minutes «

Both of these desserts will go so fast at your family gathering, friends-giving, if you’re celebrating with only a significant other, or if you’re going to kick it alone this year!

OMG. Yogurt Greatness Coming at You.

Guess what was on Monday?

My first day back to school…….like HOW??? How does time go so fast? I remember being a kid and thinking a week for spring break seemed like it lasted forever. Why can’t that still be the case? & why can’t nap time be on my schedule for in-between my classes like it was in Kindergarten? If you figure either of these things out, please let me know! LOL.

Today I’m going to share with you the SIMPLEST dessert/snack, it’s like almost funny.

It’s yogurt. HA. Told you it was simple. But to be more specific, it’s yogurt that I sort of modified. I almost forgot, it’s HEALTHY!! You’re probably thinking, how could a dessert be healthy for me? Well, if you just keep on scrolling down, you’ll see the ingredients needed for this little concoction.

Ingredients:

Organic Vanilla or Plain Yogurt 

Cinnamon (optional)

Raspberries, Blueberries & Strawberries (or any other fruit)

All natural Dark Chocolate Chips (these are my fav)

For me, the simpler the ingredients are the better. I look for wholesome foods. I also always, always look at the ingredient list. The ingredients need to be natural, I need to be able to pronounce them & there can’t be a zillion of them. This little dessert/snack really is SO simple & SO healthy, but still SO good.

Also, cinnamon can make certain foods taste so much better. Adding cinnamon to yogurt gives the yogurt so much more flavor, because let’s be honest, plain yogurt sucks. BUT, artificial yogurt that’s filled a bunch of additives and preservatives sucks even more.

As for the Dark Chocolate Chips, they’re my absolute fav!! The best thing about them is that they’re dairy, nut & soy free, & they’re 69% Cacao. Cacao is the purest form of chocolate you can consume.  If you want to add Milk Chocolate Chips, that’s totally up to! I just really enjoy dark chocolate because it’s satisfies my sweet tooth and you don’t need a lot of them!
