Delightful Moments – Trying New Fall Recipes

Hi, hi, hi!

How’s your week so far? Hopefully going well!

It sure is chilly here in Denver, which means I’ve been whipping up some new Fall recipes that I’ve never tried! It’s always fun trying new recipes, especially when they taste so great. Also, before I forget, I found all of these recipes on Pinterest! I WISH I could think of these recipes on my own, but that’s not the case. Instead, I made them myself and decided to give them an honest review for you guys.

» The first recipe I tried was the Apple Cinnamon Overnight Oats!

Here’s the thing, I’m not a big lover of oats, but I do realize that they’re extremely healthy for you. This recipe was actually very good for being oats, but I do think the recipe could use less cinnamon. The best thing about these oats is how convenient they are. You prepare them the night before, let them sit in the fridge overnight, and grab the jar of oats on your way out the door. You can also modify these oats, so instead of topping the oats with an apple, you can top the oats with a banana, berries, shredded coconut & almonds, or peanut butter & cacao nibs!

» The second recipe I tried was the Creamy Apple Cinnamon Smoothie!

I have an “apple” theme going for some reason. I guess I was really into trying new apple recipes when I was pinning all of these recipes on Pinterest! I really liked this smoothie. It was extremely filling due to the oats that are used, and that’s a good thing. I’m a big smoothie lover because I can add my vegan protein powder, maca powder, & pearl powder (will do a post on what all of these are for!). If you love apples, you will definitely love this smoothie! I don’t particularly love apples but I will eat them because of their benefits. This smoothie could also be made the night before so you can grab it on your way out the door. I like having smoothies for lunch, too. I’m not a big lunch person, so smoothies work perfectly for me because it’s not too much food.

» The third recipe I tried were the Pumpkin Waffles!

These pumpkin waffles were so good! They were extremely filling and they do take some time to make, so make them on a weekend morning when you don’t have to leave right away in the morning. The batch makes a lot of waffle batter, so these would be perfect to make if you’re having family or friends stay over on a weekend or over Thanksgiving!

» The last recipe I tried were the No-bake Maple Almond Butter Cookies!

These cookies are… interesting! They’re good but they are definitely interesting. It’s probably the “no-bake” aspect. These cookies are vegan, gluten free, whole grain, and dairy-free, which I seriously love because it’s almost like they’re healthy cookies! The recipe calls for a lot of maple syrup, I almost think too much maple syrup but they are still tasty even being vegan and dairy-free. These cookies take no time to make, literally like ten minutes, so that’s always super convenient!
