Healthy Peanut Butter & Oatmeal Cookies

If you know me, you know I love my desserts. I also really love to bake, so last night I had some free time & decided to bake oatmeal cookies!

& if you saw my Instagram stories last night, then you saw that the cookies turned out so great. Like I am VERY proud of them. So of course, I needed to share the recipe with you guys because these cookies definitely deserve a blog post. I have to tell you guys that Zach loved them too. I shoved a piece of cookie in his face, and at first he was skeptical, HA. Then he tried it and goes “oh my god, these are amazing. Are they homemade?” I guess you could say they are homemade (???), but all I did was throw some simple ingredients, like peanut butter & oats, in a bowl and stirred.

Ingredients:

» 1 cup creamy all natural peanut butter

» 2/3 cups dark coconut sugar

» 1 1/2 tsp vanilla extract

» 2 eggs

» 2/3 cups rolled oats

» 1 tsp baking soda

» 2/3 cups dairy free chocolate chips

Directions:

» Preheat oven to 350

» Mix dry ingredients in one bowl except for coconut sugar & chocolate chips, then set aside

» Mix wet ingredients, including the coconut sugar

» Add dry ingredients to wet ingredients, and mix well

» Then stir in chocolate chips

» Scoop 1 tbsp of batter onto a cookie sheet with parchment paper, flatten the cookies

» Bake for 9-11 minutes

The best thing about these cookies is that they’re actually somewhat healthy. They don’t have the unnecessary processed crap and there isn’t an insane amount of unhealthy ingredients like cups and cups of sugar, butter, canola oil, you get the picture.     Yeah, I ate an entire batch of these in 1 night. These cookies are bomb, but the healthy kind of bomb.
